Todays lunch was a real treat, and not an unhealthy one! My sister called round with a gorgeous salad for us to share. It had so many bright, fresh colours it looked amazing. It seemed even more special because she had done all the chopping and preparation.

An iceberg lettuce
A bunch of parsley
A bunch of spring onions
Salt and Pepper …
all chopped up quite small, it looked amazing.
We then shared an avocado and a tin of tuna and topped it all with a drizzle of flaxseed. Perfect.
It was really delicious and yet really simple. Nothing exotic about the ingredients, all stuff you could get in on your weekly shop, no problem.
I absolutely hate it when I get a post lunch dip in energy but I didn’t get this at all today after this salad. I think the other thing that helped my digestion was the fact that the salad forced me to eat more slowly than normal. The practicality of getting the leaves into my mouth really slowed me down. It was great – the enjoyment lasted even longer!
Thinking about how our food is going to make us feel is always a good start in being mindful about what we eat. We make good choices that we feel happy with rather than regretting.
