Martyn, Noah and I all eat lots of vegetables every day and last night was no exception.
I made this lovely mix of brightly coloured vegetables and steamed it lightly to go with our fish and potatoes. I dressed it with some flaxseed oil, balsamic vinegar and salt and pepper – perfect!
It got me thinking about why brightly coloured foods are so great for mindful eating…
1) When you focus your food preparation by concentrating on the colours that you combine you add a new level of attention and appreciation. The visual impact of your food has an amazing impact on how much you enjoy it. Make it look beautiful and you will have a happier eating experience!
2) Brightly coloured vegetables are great for you so there are super health benefits to piling your plate with amazing colours. They tend to be high in the antioxidant betacarotene which reduces cancer-related free radicals. They tend to be low in fat. Eating food that you know is good for your body leaves you will a sense of well being and a contented, guilt free, mind.
2) Mindful eating is all about slowing down. If your food is brightly coloured the chances are it will take a bit more chewing. By taking longer over your food you will help your digestive system out. You will also spot that full feeling more easily so you don’t overeat!
