Mindfulness encourages us to be inquisitive. To look at things afresh. Never taking things for granted but noticing how they are in this moment. This fits in so many circumstances and has great benefits but is strikes me that this is particularly helpful in respect of food and our diets.
Since entering into my diet for MS recovery I have become a label reader! Actually as time has worn on I have eased off the labels and just accepted that most things have fat or sugar in them so I leave well alone! Vegetables are a fail safe for me.
Over the last couple of days it has been a bit chilly and my desire for soup has returned! Canned soups and even the cartons from the fridge sections are a no go for me.
Be inquisitive and you will be amazed what else is added to bought soup. Heinz tomato soup has cows milk in it! That was a real shocker for me. Most have some sort of fat that make them unsuitable on my diet. Many of the soups you can buy have sugar and excess salt in them.
Making your own is sometimes the best way to ensure that what you eat really is good for you. If you are trying to loose weight then making your own is a great way to avoid eating excess calories and fat that can be ploughed into bought soups to make them taste better.
Tonight we had leek and potato soup and it was gorgeous, one of the meals you want to last forever! Leeks seem to be cheap at the moment and we had plenty in the fridge so it was a good last minute tea time idea.
Our recipe is so simple and yet it really tastes delicious…
Chop up 4 leeks and 4 large potatoes and put them in a pan
Top the pan up with water
Season with salt and pepper
Bring to the boil and let is simmer until the potatoes are soft
Use a blender to make the soup smooth (optional)
So – not a drop of cream in sight but a truly delicious, creamy and filling soup. Give it a try. It will leave you wondering why you ever resort to bought options.
