Today I invited my parents and my sister’s family round for lunch. Most of us are vegetarian so there was no meat on the table.
A Sunday roast with no roast?!
Well yes, and it was TOTALLY delicious.
A few years ago, before I went on my MS recovery diet, I would never have dreamt that I would be eating meat free 100% of the time.
So today it really struck me how things have changed – quite drastically really.
Being open minded, experimental and willing to try things has made my diet possible. Being Mindful has allowed me to persevere. Having the support of my family has made a huge difference too.
Sticking to a diet, whatever it is, can be tough. For me keeping my aim clear in my mind means I always have the motivation to make the right choices.
